Traditional reduced sodium sea salts have used Potassium Chloride as a replacement for some of the Sodium Chloride (Salt). Potassium Chloride however has a bitter metallic taste and this is somewhat but often not completely masked by the flavour of the salt. The current popular reduced Sodium salts currently on the market are simply two chemicals mechanically blended together. Flowing agents are added to stop them sticking together and flavour maskers are also often added to hide the taste of the potassium salt.

To keep a consistent flavour and to hide the bitter taste of the potassium salt the blended mix of the two powders must remain the same as when it was manufactured. When two individual products are blended together there is however a tendency for them to segregate into separate layers. When this "layering" takes place in the current reduced sodium salts there is often a resultant inconsistent flavour as the two salt products are not delivered in the correct ratio compared to when they were first blended in the factory. To reduce the chance of this happening current popular versions of these products use very fine powder version of the salts to limit the segregation into different layers but for many current products this cannot be guaranteed.

Our crystals are completely different as each individual crystal contains 66.7 % Potassium Chloride and 33.3% Sodium Chloride. This means that each crystal tastes consistently the same and consistently delivers 66.7% less sodium than standard salt. There is no issue with layering therefore a consistent flavour can be guaranteed.

As our starting salt ingredients are also not limited to very fine table or common salt we are able to use sea salt as one of our  ingredients. By using the variety of flavours offered by different sea salts our reduced sodium version has the same great flavour. We used a number of sea salts in our development until we got the right mix to ensure optimum flavours and have custom developed individual salt blends for different customers.

Therefore by using our MILLDOWN® salt not only do you get a consistently great tasting product you also reduce your discretionary salt intake by 66.7%.
